1. Have Mako Shark steaks cut about 1-1/4" thick.

2. Pre-heat heavy skillet, broiler or grill.

3. Place Shark steak on plastic wrap.

4. Fully coat with clarified butter.

5. Place in refrigerator so butter solidifies.

6. Remove plastic wrap.

7. Cook for 5 minutes.

8. Turn.

9. Cook for another 5 to 8 minutes.

10. Serve with lemon wedges.

Tips:

1. Select fresh steaks at the market. If possible, get the steaks dockside from returning fishing boats.

2. Clarified butter means you skim any solids off after melting it, not really a necessity for this recipe.

3. Times are approximate and will vary according to your choice of cooking method.
